  2. 1 loaf Italian Bread , medium length , fresh or left from another meal . 1lb mild Italian sausage or hot if preferred . 1 med eggplant cubed . Mine were frozen from the garden . 1 small cam mushrooms or fresh portobello or baby Bella’s . 1/2 small onion diced . Olive oil ( to sauté ) Balsamic vinager ( for kick , I used Sicilians lemon balsamic from Crystal City ) brings flavors together . Brown the sausage with the onions , set aside . Sauté cubed eggplant and mushrooms in olive oil , eggplant will suck up oil so be generous ( I also used Blood Orange olive oil from Chrystal city it and balsamic really add flavor here . Balsamic is to taste . Then add sausage back in , stir to combine . Salt and pepper to taste . Cut the top third from the Bread , dig out the “guts “ crumble this in with sautéed mixture ( will probably need more oil as you mix , kind of a dressing texture , add a little oil as you go ) brush bread bowl with olive oil ( plain ) , spoon in mixture , okay to smush it down a bit or leave it humped up . A little of that shaky cheese in your fridge , you know Parmesan Romano on top of mixture ( not too much ) . Top with American cheese I used four slices , or mozzarella if you like . Little bit more of that shaky cheese on top and a pinch of Italian seasoning to finish . Bake 20 Minutes at 375 or until cheese is brown . No eggplant , zucchini is fine . Probably good with a tomato diced up . You can use plain olive oil but the oils from Crystal City and Balsamics are great for this and also make a delicious salad dressing emulsion for those eating healthy . Wow took me longer to make up this recipe than to actually make it , but that’s it , exactly as I made it ( or made it up off the top of my head ) LOL !

  6. Pics later , but my beds were taken over by the Violina Rugosa’s … what the hell is that you say ? Giant Italian Butternut squash basically! These things are not even full grown yet but the way they took off when i started them in the greenhouse i should have known geez ! They are from Heritage Stock seeds and come to find out a somewhat of a rarity . Poor ‘maters never had a chance in the fight for space ! I’ll be saving seed from these but next year they are going to grow in the field !! 😆

    Thank you Linda for your poem and sharing yours and Eds situation ! I also believe that we are sometimes handed more than we can bear in this life , as with watching our life mates struggle through pain and illness and in some cases losing the battle . Ann tells me that God never gives us more than we can handle and I know in my heart what she says is true ! But I still wish that I had that “ magic pill “ to take away her pain , Eds pain and the pain of MsKreeds loss ! But then I read your words and a message comes through them to me . Put it all in Gods hands because inevitably thats were “ It “ all goes ! But then again He gave us each other to reach out and hold onto as well , maybe that is the magic pill . Again Linda , Thank you . I believe a lot of us needed those words right now .
  10. I see it closer , more like in the Fall ! Its a government push to get vaccinated and yes i am fully vaccinated myself . And Having the whole conversation with medical types in the family , they make sense to us in what they tell us . And no i will not go into the whole two sided , vaxed and unvaxed argument . Its a personal choice …
  11. Yes Kevin … someone , a go getter , someone that is not so much worried about their cut of the gate or concessions or pro shop ! Someone that will devote the time and work to getting in the events to fill those seats , new blood , not the same “ good old boys “ that don’t know shite about the entertainment industry ! Of course that would not be me , but I do recognize piss poor management when i see it . And heres the thing … I have seen too much of it !!
  12. Old , eccentric, Country … 😆. Not laughing at you , laughing with you ( i hope ) ! Anyway these were just used as an example to make a point about empty seats . Now if you were there and saw exactly the opposite with your examples I see that as a good thing and yes you are correct new and more exciting events are needed ! But whats needed more is a professional promoter that can stand aside from the local yokels that have had their chance at the reins ! Or just tear the damn thing down …
  13. Done correctly and price point ( for this area ) , agreed , are key to some success . But yes there are other places this so called Rescue Fund could go . But no to non profits , businesses on the edge before pandemic ( as stated by KReed ) Local Government “ shortfalls “ and some of the others . These funds should benefit the entire County … visibly benefit , not create a couple new jobs on the upper County employee level . Look , the City of Elmira is going to get their own bit of this pie and as shown historically they will screw it up ! They do not have the ability of forward thought , just “flood fear “ ( again see KReeds reference) . Counties cut of this pie should not , I repeat Not include any outlays to the City with the exception of Dunn Field . Not sorry for my opinion on this City thing but i am 68 lived in this area all that time and never once have I seen the City do anything to move in a forward direction , always static or backwards . The County has a chance now that there is new Leadership at the Executive level to move forward if given the chance . Lets see if the Legislative level will do the same … sure !
  14. There is a roof over the Arena … how many concerts/ event have they had lately ? Not being snarky Karen but as with the grandstands at the fairgrounds, rain obstacles can be overcome . As for cold weather events could be booked in numbers high enough to carry maintenance costs etc. over the Winter , that is … If sticky hands were not allowed in the mix !!
  15. Geez , really … so by his reasoning all Italians are Narcissistic?! Interesting to hear how other nationalities stack up against his ! Oh wait … Irish are drunkards , Scots are cheap /frugal , Polish are the brunt of the dumb jokes and on and on ! No , Coumo is just narcissistic and arrogant and let his position go to his head ( and hands ) .
  16. Just a thought and i may be off base with it but bear with me . I attended just two concerts at the Arena , one was Vince Gill and Amy Grant Christmas show . We has the cheap seats as one of our kids won two tickets from a radio promo . We were wayyy back at the end section and i remember remarking about how many empty seats there were and took a quick head count of actual bodies as compared to empty seats . There were , to my surprise , more people there than i thought . Next was the Irish Show ( sorry chris , forgot the name of it ) where we had great seating and again a large crowd but plenty of empty seats . Another ( forgot about ) Celtic Thunder , again great seating , like five rows back and center on the ice ! Again same observation . Now to my point … Size does matter ! The arena , I believe , was / is just too big a venue for concerts and shows of any kind in this area and as Chris and I were discussing last weekend , people just won’t come to Elmira , at least as many as needed to fill those seats ! I believe that Dunn Field would be better suited to concerts /shows etc., the size of the venue and seating would be more than adequate for attendees of the area and any from out of town that would be interested enough to make it a destination event . Fill the seats Consistently at Dunn Field and you would have something to brag about , let people see “Sold Out “ at the ticket office or on line and you will fill them all the faster next event , it’s human nature take advantage of it . One other thing , DO NOT USE A LOCAL PROMOTER ! They have to fill too many other pockets …

  20. No , no … junk lumber , stuff you have laing around the ranch ! Or just go get some of those saplings off the hill . Cut them off so that you have a fork for the limb . Lift the limb gently and set it back dow into the fork , the weight will hold it just fine . I’m just a couple days away from having to prop mine .. or at least just the ones that need propping.
